Elements of Competency Performance Criteria
Element: Identify requirements for using the RI
  • Identify workplace health and safety hazards of site, assess risks and implement control measures
  • Identify regulatory requirements for process compliance using the refrigeration index
  • Identify the RI measure and the uses of predictive microbiological model
  • Identify factors affecting microbial growth
  • Identify RI model parameters

Element: Collect temperature data
  • Set up data logger to effectively record data
  • Place temperature sensor in product, taking into account the point of microbiological concern and recommended placement
  • Process time-temperature data into correct format for RI calculator

Element: Select and define process to be validated
  • Define process to be validated in terms of output
  • Define production lot for validation
  • Identify variables in the process being validated
  • Identify number of measurements required for validation
  • Identify when and where data collection should occur
  • Load and open RI calculator software
  • Select correct RI calculator options for process being validated
  • Calculate RI for process to be validated

Element: Utilise RI to validate process
  • Compare RI with requirements of Expert Control Rules
  • Assess appropriateness of the data where RI does not comply
  • Take action to correct a non-conforming process
  • Make decisions on production disposition for a refrigeration breakdown

Element: Document a RI validation process
  • Record the purpose, process and arrangements for RI validation
  • Document data collection methods and calculation options used, and summarise data collected
  • Record validation decision according to workplace requirements

Submission Requirements

List each assessment task's title, type (eg project, observation/demonstration, essay, assignment, checklist) and due date here

(add new lines for each of the assessment tasks)

Assessment Tasks

Copy and paste from the following data to produce each assessment task. Write these in plain English and spell out how, when and where the task is to be carried out, under what conditions, and what resources are needed. Include guidelines about how well the candidate has to perform a task for it to be judged satisfactory.
Copy and paste from the following performance criteria to create an observation checklist for each task. When you have finished writing your assessment tool every one of these must have been addressed, preferably several times in a variety of contexts. To ensure this occurs download the assessment matrix for the unit; enter each assessment task as a column header and place check marks against each performance criteria that task addresses.
